Balsamic Beef

Balsamic Beef

Dave Keish

  • 4-6 lbs. of roast beef
  • 2 cups of balsamic vinegar
  • 1/2 cup of brown sugar
  • 2 Tbls soy sauce
  • 1 tsp. red pepper flakes
  • 6-10 minced cloves of garlic (add more if you are a garlic lover!)
  • 2 cups of beef broth
  • Salt and pepper to taste

Slice roast into 1 inch pieces and place in slow cooker.  You should have 6-8 slices and they can overlap.  Mix all of above ingredients together and pour over the meat. Cook 4 hours on high or 6 hours on low until meat is tender.  Remove beef and pour liquid into a saucepan and reduce by half.   Add seasoning if needed.  Pour over beef and enjoy!

Option: you may add cornstarch to liquid after removing beef if you prefer a thicker gravy like sauce. Serve over rice, noodles, mashed potatoes or by itself.
