2 lbs small fingerling potatoes
2 garlic cloves, crushed
1 to 2 tsp of Avant Garden Infused Olive Oil (We love the Rosemary)
Squeeze of Lemon (or grate a touch of lemon zest on top_
Sea Salt and Cracked Black Pepper
Parmesan/Locatelli Cheese (optional)
Heat oven to 500 degrees F. Spread potatoes out on a cookie sheet. Scatter garlic over the potatoes. Coat lightly with the EVOO, a touch of lemon and season potatoes with salt and pepper. Roast for 20 minutes or until tender. We love sprinkling a touch of cheese on top!
